Japanese cucumber sunomono is a traditional Japanese salad or side dish made with thinly sliced cucumbers marinated in a sweet and tangy vinegar-based dressing. It is a refreshing and light dish commonly served as a side dish in Japanese cuisine.
This Japanese recipe is very easy to prepare.
It is often served with wakame seaweed, but today I simply served it with white sesame seeds, which are easily available outside of Japan.
Ingredients
- 1 Cucumber
- 1 tbsp rice vinegar
- 1 tsp soy sauce
- 1 tsp sugar
- 1 tsp white sesame seeds
- Pinch of salt
Instructions
1.Cut the cucumber into thin, small pieces
2.Add a pinch of salt to cucumber, leave for five minutes
3.Mix well rice vinegar, soy sauce and sugar
4.Squeeze the cucumber to release the water. Discard the water.
5.Add the made sauce and white sesame seeds and mix
