How to make Japanese fried rice / chahan

Japanese fried rice, known as “チャーハン” (chāhan) in Japanese, is a popular dish influenced by Chinese cuisine but with distinct Japanese characteristics. It is very common in home cooking because it is easy to prepare.

Here is a recipe for Fried rice.

Ingredients

  • 3g ginger
  • 2 eggs
  • 50g shrimp
  • 200g hot Japanese rice
  • 1 green onion
  • 11/2 tsp soy sauce
  • 1 tbsp sake
  • salt and pepper

Instructions

1.Finely chop the ginger.
2.Finely chop the green onions as well.
3.Time is of the essence when making fried rice, so it is best to prepare the ingredients before cooking.
4.Add more oil to the pan.
5.Add ginger.
6.When fragrant, add the shrimp.
7.When the shrimp begin to change color, pull them to the edge of the pan and add the eggs. Mix.
8.Add Japanese hot rice
9.Fry the rice while breaking it up.
10.When the rice is somewhat broken down, add salt and soy sauce. Mix well.
11.Add green onions and mix lightly.
12.Add more black pepper. The more you add, the more flavorful and delicious it will be.
13.Add sake.The addition of sake makes it moist and also reduces its oiliness.
14.Mix.
15.Place the fried rice in a bowl.
16.Press it a little.
17.Place a plate on top and turn it over.
18.Take the bowl.
19.Top with green onions to taste.
