Sushi is the most famous Japanese food. Nowadays, there are sushi restaurants all over the world. The word “sushi” encompasses a wide variety of variations. California rolls in other countries are a good example, but the ingredients and descriptions vary depending on the region and the restaurant.

What is Sushi?

In general, sushi is a Japanese dish that combines shari (vinegared rice) and Neta (Sushi topping ).

Fresh seafood is often used for the neta, but meat, vegetables, eggs, and other ingredients can also be used for the neta.

History of Sushi

Origins (3rd-8th Century)
The roots of sushi trace back to an ancient preservation method called narezushi, practiced in Southeast Asia and later adopted in Japan. In this method, fish was salted and wrapped in fermented rice, where the rice was discarded, and only the fish was eaten. This preservation process allowed the fish to be stored for long periods without spoiling.

Development of Nama-nare (14th Century)
In the Muromachi period, nama-nare (a type of sushi where both the rice and fish were consumed) emerged, representing a transition from pure preservation to enjoyment as a meal. People began eating sushi as a way to savor both the fish and rice, which were slightly fermented together.

Birth of Edo-style Sushi (Early 19th Century)
The modern style of sushi, known as nigiri-zushi, originated in Edo (now Tokyo) in the early 19th century. Hanaya Yohei, a Tokyo chef, is credited with creating nigiri by topping a small ball of vinegared rice with fresh, raw fish, resulting in a faster, more convenient style that suited bustling city life. This style became immensely popular and is now the foundation of what we recognize as sushi today.

Post-War Sushi Evolution (20th Century)
After World War II, sushi’s popularity spread worldwide. Refrigeration made it possible to transport fresh fish over long distances, and Japanese immigrants introduced sushi to countries around the globe. In the United States, sushi evolved further with the invention of the California Roll—featuring avocado, cucumber, and crab—marking a fusion of Japanese and Western tastes that made sushi accessible to broader audiences.

Modern-Day Sushi (21st Century)
Today, sushi has expanded far beyond its traditional roots, featuring countless regional variations and fusion styles. From conveyor belt sushi (kaiten-zushi) to high-end sushi dining, sushi now encompasses a wide range of ingredients and preparations, making it one of the most beloved dishes worldwide.

Types of Sushi

Nigiri-zushi

Nigiri-zushi is one of the traditional types of sushi in Japan. It consists of a small mound of vinegared rice topped with a slice of fresh fish, shellfish, shrimp, or other seafood. A small amount of wasabi is usually placed between the rice and the topping. This simple yet elegant form highlights the freshness of the ingredients and the skill of the sushi chef.

Maki-zushi

Also called “nori maki,” it is made by wrapping sushi rice and ingredients around a sheet of nori like a cake roll. It differs from ordinary nigiri-zushi in that several ingredients can be enjoyed at once. The name of makizushi changes depending on the thickness of the roll, from thin to thick. (Futomaki,Hosomaki)

Gunkanmaki

Gunkanmaki is a sushi roll consisting of sushi rice rolled in nori seaweed and topped with a sushi type. It is named for its resemblance to a battleship.


Chirashi-zushi

Chirashi-zushi is sushi with seafood, vegetables, eggs, and other ingredients scattered over a bed of vinegared rice. It has a gorgeous appearance and is often made for special occasions and celebrations, but it is also commonly made at home. The choice of ingredients and their arrangement give it a unique flavor that varies in every household.

Inari-zushi

Inari-zushi consists of vinegared rice stuffed into pockets of sweet and savory tofu pouches. The combination of the tofu’s sweetness and the rice’s tanginess creates a delightful balance. It is easy to make and is a popular home-cooked dish.

Temaki-zushi

Temaki sushi, or hand-rolled sushi, is a cone-shaped piece of nori filled with vinegared rice and various ingredients of choice. It is a popular choice for parties because everyone can make their own rolls with their preferred fillings. It’s easy to prepare and offers a variety of flavors.


Oshi-zushi

Oshi-zushi is made by placing sushi rice and ingredients on a square wooden frame, covering it with a lid, and pressing it down with the hands. Saba Sushi and Battera are well-known examples.
