How to make Yakitori Don / Japanese Recipe

Yakitori don is a Japanese dish consisting of grilled chicken served over a bowl of rice. Yakitori refers to bite-sized pieces of chicken skewered and grilled over an open flame. In Japan, there are many yakitori restaurants. However, at home, it’s common to prepare the chicken without skewering it, cooking it in a frying pan instead, and serving it as yakitori don.

Ingredients

  • 300 g chicken thigh
  • 1 large leek
  • Green onion, to taste
  • Nori (seaweed)
  • Hot Japanese rice
  • 3 tbsp soy sauce
  • 1.5 tbsp sugar
  • 2 tsp mirin (sweet cooking rice wine)
  • 1 tbsp sake

Instructions

1.Cut leeks into 4 cm pieces.
Choose the same thickness as much as possible.
2.Cut green onions into small pieces.
(Option)
3.Cut chicken thigh into bite-sized pieces.
4.Make sauce.
Mix soy sauce, sugar, sake and mirin.
5.Oil a frying pan.
6.Add chicken and leek.
Grill chicken skin side down.
7.urn over when browned.
Grill the leek on the sides as well.

8.When the chicken and leek are browned, add the sauce you have made.
Mix the sauce again before adding.
9.Toss the sauce and bring to a simmer.
When the sauce is reduced, turn off the heat.
10.Place hot Japanese rice in a large bowl.
11.Tear the nori by hand and place it on top of the rice.
12.Serve with cooked chicken and leek as well.
Pour the sauce over the top.
